Ingredients:

  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your preferred type)
  • 8 asparagus spears, trimmed and blanched
  • 4 large eggs, for poaching
  • Salt and pepper, to taste
  • Cooking spray or melted butter
  • Herbs (optional)

Method:

  1. Preheat your Hamilton Beach Pro Smart Waffle Maker, selecting the 'Custom' pre-set program.
  2. In a mixing bowl, whisk together the eggs, flour, salt, and shredded cheese until smooth.
  3. Lightly grease the waffle maker with cooking spray or melted butter.
  4. Pour enough batter onto the preheated waffle maker to cover the waffle grids.
  5. Close the lid and cook the waffles according to the 'Custom' program or until golden brown and crispy.
  6. While the waffles cook, poach the eggs in simmering water for 3-4 minutes for a soft yolk, then drain on a paper towel.
  7. Once the waffles are cooked, remove them from the waffle maker and transfer them to serving plates.
  8. Top each waffle with blanched asparagus spears and a poached egg.
  9. Season the poached eggs with salt and pepper, to taste. Add herbs (optional)
  10. Serve immediately and enjoy!
